About Ruster Ausbruch DAC - Golden Yellow Sweet Wine:
Ausbruch (literal meaning: "break-out") or sometimes Ausbruchwein is an Austrian wine term for a quality level in the Prädikatswein category.
The term Ausbruch initially designated a wine made from mixing grapes strongly affected by noble rot with must from less concentrated grapes, in the Spätlese to Beerenauslese range.
Ruster Ausbruch is a sweet, botrytised wine made from vineyards around the famous wine city of Rust in the Austrian region of Burgenland. It is situated between Beerenauslese and Trockenbeerenauslese in requirements, which makes it a sweet dessert wine typically made from grapes affected by noble rot.
The minimum must weight requirements for Ausbruch is 30 degrees KMW. The Ausbruch Prädikat exists only in Austria and Hungary, not in Germany.
The category was introduced into Austrian wine legislation in 1970, as a legalisation of the production method allegedly already used in the area of Rust.
Ruster Ausbruch are still the most common Ausbruch wines to encounter; in many other Austrian regions, producers classify their wines as "Beerenauslese" if they fall short of the Trockenbeerenauslese requirements.
Since 10/2020, the Ruster Ausbruch is legally protected by the Austrian DAC system of origins as "Ruster Ausbruch DAC". It gained DAC status in 2020, becoming the 16th such designation.
The Ausbruch category exists only in Austria.
It falls between Austrian Beerenauslese and Trockenbeerenauslese in terms of required sugar levels in the grape must. The miminum is 30°KMW (around 156° Oechsle). Most finished wines have 200 to 300 grams per litre sugar.
The earliest documents mentioning Ruster Ausbruch date back to the mid 16th century.
It was long regarded as at par to "Tokaj or Sauternes" in the royal courts of Europe.
As early as, in 1524, Queen Mary of Hungary conferred the right for the winemakers of Rust to brand their export barrels with the letter "R" as a sign of origin and guarantee of quality. The symbol remains on the corks and labels today.
Though Rust is legally a city, it is the smallest in the country, with only 1900 inhabitants.
It is also the home of the Austrian Wine Academy, a national non-profit center for wine education.

Grape varieties:
Historically the Hungarian grape Furmint was used in Ausbruch production but presently it is rarely found in Austria.
Most producers use a mix of grape varieties with Chardonnay, Pinot Blanc, Traminer and Welschriesling being the most popular.
It is a golden yellow sweet wine made from grapes affected by botrytis cinerea, an edible mold. The berries are dried, which increases the sugar content and enhances the aroma.
The “Ruster Ausbruch DAC” must be made from hand-picked white quality grapes grown in the area of Rust and have a minimum must weight of 30 °KMW.
The city centre of Rust with its stately homes dating from the 16th to 19th centuries is a protected area.
In addition to the historic buildings, large stork nests on the roofs catch the eye, which is why Rust is called the “city of storks”.
Rust is also part of the UNESCO World Heritage site Fertő/Lake Neusiedl, recognised in 2001.
